What grind size does a moka pot need?

Finer than drip, coarser than espresso. Table salt is the reference texture. Too fine and the pot chokes and turns bitter, too coarse and the water rushes through weak.

You do not tamp a moka pot. Fill the basket, level it with a finger, and leave it loose.

If you are buying pre-ground, a standard drip grind is slightly too coarse but workable. A grind sold for espresso is too fine.

Why does moka pot coffee taste bitter even with good beans?

Usually heat. Most people leave the pot on the burner until it hisses, which scorches the last of the brew and drags bitterness into the cup.

Use medium heat, not high. When you hear the flow change to a sputter, take it off and run the base under cool water.

Start with pre-heated water in the base. It shortens the time the grounds sit against hot metal, which is where a lot of the burnt taste comes from.

Yes, and dark espresso roasts work well. The one thing to change is the grind. Espresso grind is too fine for a moka pot and will choke it, so go a step coarser toward table salt texture.

Should I use pre-ground coffee in a moka pot?

You can. Look for a grind labeled for drip or moka rather than espresso. Freshly ground is better, but a good dark roast pre-ground will beat a stale bag you ground yourself this morning.

Is moka pot coffee the same as espresso?

No. A moka pot brews at roughly one to two bars of pressure, where espresso machines run around nine. Moka coffee is stronger and heavier than drip but it is not espresso and will not build a real crema.
