A lot. Water is around ninety-eight percent of the cup. Heavily chlorinated or very hard tap water puts a hard ceiling on how good any coffee can taste.
A basic filter jug is enough. You do not need anything special.
Hard water also builds scale, which lowers brew temperature over time.
What grind and roast should you use?
A medium grind about the texture of coarse sand, and a medium roast. Most home machines brew slightly below ideal temperature, which flattens light roasts.
If grounds are still swimming in the finished pot, the grind is too fine.
Cone filters want a slightly finer grind than flat bottom baskets.
The morning you want is boring and repeatable.

How often should you clean the machine?

Why does my coffee maker make bitter coffee?
Usually the carafe sitting on the hot plate, or scale in the machine lowering brew temperature. Both make coffee taste bitter even when the beans and dose are right.
How much coffee for a 12 cup pot?
Around 90 grams, or roughly 12 level tablespoons, for a standard 1.5 litre carafe. Most people use far less than this and then wonder why it tastes thin.
Does an expensive coffee maker taste better?
Somewhat, mostly because better machines hold brew temperature between 195 and 205 degrees. But dose and freshness change the cup far more than the machine does.
Should I use bottled water in my coffee maker?
Filtered is enough and cheaper. Avoid distilled, which lacks the minerals that carry flavour. Ordinary filtered tap water is the sweet spot.
