Is dark roast coffee less acidic?
For most people, yes, and there is some science behind it. Roasting longer breaks down chlorogenic acids, and German researchers found dark roasts form more of a compound called N-methylpyridinium, which in their studies was linked to less stomach acid production. The research is small, but it matches what a lot of people with sensitive stomachs report.
The catch: dark does not have to mean burnt. A scorched dark roast brings its own bitterness. You want dark and smooth, which is exactly what we roast 15W40 to be.
What does "low acid coffee" on a label actually mean?
Less than you would hope. There is no official standard for calling coffee low acid. Some brands test pH, some use special processing, and some just print it because it sells. Coffee usually lands around 5 on the pH scale, which is already less acidic than orange juice or soda.
