Here’s what you need to make this recipe:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 2 eggs
  • 1/2 cup sour cream

  • 1 cup powdered sugar
  • 2 tablespoons Fire Watch Medium Roast coffee, brewed and cooled

Here’s how to make it:

  1. Preheat oven to 350°F (177°C) and grease a 9x13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the sour cream, coffee, and vanilla extract and mix well.
  6. Gradually add the flour mixture and stir until well combined.
  7. Spread the batter evenly into the prepared pan.
  8. To make the crumb topping, combine the flour, brown sugar, cinnamon, and salt in a small bowl.
  9. Cut in the butter with a pastry blender or a fork until coarse crumbs form.
  10. Sprinkle the crumb topping evenly over the batter.
  11. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  12. Let the cake cool completely in the pan on a wire rack.
  13. To make the glaze, whisk together the powdered sugar and coffee in a small bowl until smooth.
  14. Drizzle the glaze over the cooled cake.
  15. Cut into pieces and enjoy!

2. MOAB Double Caffeinated Medium Roast Coffee Cake

This recipe uses MOAB Double Caffeinated Medium Roast, which is one of the most popular roasts from Aerial Resupply Coffee. It has twice the caffeine of regular coffee, so it’s perfect for those who need an extra boost of energy. It has a bold and smooth flavor with notes of chocolate and citrus.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the sour cream, coffee, and vanilla extract and mix well.
  6. Gradually add the flour mixture and stir until well combined.
  7. To make the filling, combine the sugar and cocoa powder in a small bowl.
  8. Stir in the chocolate chips and walnuts.
  9. Spoon half of the batter into the prepared pan and spread evenly.
  10. Sprinkle the filling evenly over the batter.
  11. Spoon the remaining batter over the filling and spread evenly.
  12. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  13. Let the cake cool slightly in the pan on a wire rack.
  14. To make the glaze, whisk together the powdered sugar and coffee in a small bowl until smooth.
  15. Drizzle the glaze over the warm cake.
  16. Let the cake cool completely in the pan on a wire rack.
  17. Cut into slices and enjoy!

3. Spring Kitty Salted Caramel Mocha Coffee Cake

  1. Preheat oven to 350°F (177°C) and grease a 9 inch springform pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the sour cream, coffee, and vanilla extract and mix well.
  6. Gradually add the flour mixture and stir until well combined.
  7. To make the filling, beat together the cream cheese and sugar in a small bowl until smooth.
  8. Add the egg and vanilla extract and beat well.
  9. Spoon half of the batter into the prepared pan and spread evenly.
  10. Spoon the filling over the batter and spread evenly, leaving some space around the edges.
  11. Spoon the remaining batter over the filling and spread evenly.
  12. Bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  13. Let the cake cool slightly in the pan on a wire rack.
  14. To make the topping, drizzle the caramel sauce over the cake and sprinkle with chocolate shavings.
  15. Let the cake cool completely in the pan on a wire rack.
  16. Cut into wedges and enjoy!
