Stir the honey and cinnamon into the hot espresso until the honey is fully dissolved and the cinnamon is suspended. Then steam the milk to 150 degrees and pour.
Honey will not dissolve in cold or warm liquid. It has to meet the hot shot directly.
Cinnamon floats regardless. Stirring again before drinking is normal.
